You need to become a student of monster animation, much like in Monster Hunter. If a beast crouches low and glows red, it might be preparing a sweep attack that you must jump over; dodging sideways will still get you hit.

If they raise a limb high, a potential parry opportunity is coming. Learning these “tells” is more valuable than grinding for levels. If you can read the tell, you can negate the damage entirely, regardless of your level.
